Pregnancy and Food

So, all I have really posted about my pregnancy is that I am pregnant. I figured I would share what few details we have. I have had 2 Dr.'s appointments and one ultrasound. At first they told me my due date was June 26th, but they have pushed it back (after the ultrasound) to July 7th. (This puts me at about 8 weeks) However, it will be about a week before that as I am pretty sure that I will be having another c-section. According to the ultrasound, everything looks good and normal. I was feeling good in the beginning, but all the normal pregnancy crud has decided to settle in pretty hard this week. So, if you ask me how I am feeling, and I say "ok" or "good", I am probably lying and just trying to spare you all the details and complaining. We are very happy and excited...and a little overwhelmed that we will have 3 kids ages 3 and younger. And both Jake and Kate are still in diapers. We will be working on this between now and July.

Lately, when I have decided to pull myself off the couch from my fetal position, I have found myself in the kitchen cooking what few things I can even think of to stomach. Yesterday, I made a pumpkin cake and for dinner I made chicken piccata. Normally, I only blog about what I bake, but I have to note the accomplishment of making dinner since it has not happened too much lately. It was all really good.

The glaze cooled very quickly making this cake look like a candle. Not exactly what I was going for, but I thought it looked kind of cool.
My chicken piccata. I love the lemon butter sauce with the capers and roasted red peppers. We served it with whole wheat penne pasta. Yum!
Sidenote - Happy 100th posting for this blog! I thank Jen Thomas and Kat Rose for assuming that if anyone would have a blog that I would. They were disappointed to find out that I did not. Jen told me that I needed to start one. The next day, I did just that. Jen got both me and Kat to start our blogs. I have enjoyed it, as has Stan. He checks my blog all the time and reads all the comments, sometimes before I do. He is always very interested to see what people have to say about my posts. Who would have thought? He told me he likes the ones where I show the creative things that I do. I was quite puzzled at that as I feel that I am not very creative. He said that he was referring to the posts where I show what I bake. I guess it makes sense that those would be his favorite.

That chicken looks so yummy. And very cool glaze. Hang in there. Only . . . many, many months left!

I'm so so so happy for you about your baby. Especially because I'll be craving a baby by then and so I can get my newborn-cuddling-urge satisfied from your baby!

100 posts huh? Wow!
I'm so impressed you are cooking such lovly things while in your first trimester. That so would not happen in our home. It's Mac & Cheese all the way.
I'm sorry things are pretty miserable. Wouldn't it be great if a stork just dropped the babies off like in Dumbo?! That would be a dream come true for me. A live-in cook would nice too.
I'm here if you ever need anything.

I feel for you man. The crud still hasn't left and I've only got 9 more weeks to go. Congratulations though, we're very happy for you guys. We'll have the baby, Kenadie, and Avrie in pullups at night--not a pleasant thing to think about!

Congrats on your pregnancy! That is very exciting news!! I will have to check in more frequently to see how you are doing. I hope you feel better soon. Your cake looks yummy!
