Latest Creations

In my efforts to find orignial recipes for the Pillsbury Bake-off, I have found that I am swimming in a variety of Pillsbury products. Not only am I having to think of new recipes, I am also just trying to use up all this stuff. So, here are a couple of things that I have made that I did not come up with.

First, Amy and her friends wanted to come over and bake some stuff for a wedding shower that they were going to. I decided that we would make these fun little quiches. Click for the recipe.They were so good. I only got one since they took the rest, so I made a second batch later on. I would highly recommend this recipe. It is easy and they pretty much rock.

So, this is what I do with Kate while I bake so that she is not in my way. A washcloth and a little steady stream of water and this girl is in heaven....and I can get stuff done.

This is what I made yesterday.I actually made 2 of these yesterday. I think the other one was probably prettier, but I guess I forgot to take a picture of it. Oh well. Ok so here is how to make this thing. It is easy so Iwill just type out how to do it.

Get sugar cookie dough, cut it into 1/8" pieces, spread around a round pizza sheet and press down until it is covered
Bake for about 10 minutes. ( I forget the temp. Look on the cookie dough package.)
The frosting is made with 8oz. of cream cheese, 1/2 cup sugar, and 1 tsp. of vanilla.(mixed well until creamy)
Let the cookie cool and then spread your frosting evenly. Then top with whatever fruit you would like. I used strawberries, bananas, mandarin oranges, kiwi, and blackberries. (use google images to get some inspiration for a design)
I have never done a glaze before so I searched for a recipe, but they all called for orange juice and corn stratch and I had neither. I improvised and my glaze turned out pretty well. I am putting it on here b/c Shelyse wanted it.

Glaze: (Optional, but better with it) I used all the juice from my mandarin oranges when I drained the can. Then I added some lemon juice until the two combined made 1/2 cup. I mixed this with 1/2 cup sugar, and 3 tbs of flour. Put it in a small saucepan and slowly bring to a boil over med/high heat. The mixture should become bubbly and then thicken up nicely. Allow it to cool before drizzling over the fruit pizza. I also drizzled some chocolate syrup. Then store in the fridge until ready to serve.

My family has had dessert contests in the past around Thanksgiving and Christmas for the past few years. I entered this one year and won the prize for the best looking and best tasting. (And that was without the galze and chocolate syrup) It really is a great combination of flavors.

They look awesome! I love the pic of Kate--good idea. I have to cook when Benjamin is asleep since he just whines as my feet. Bake off here we come!

I was looking at your babystrology thingy and jumped for joy when I saw that you were 25+ weeks! Maybe it's just the NICU nurse in me, but I always feel so much better when people make it to the viable stage, wait till you see the celebration I throw when you are 32 weeks! Hang in there!
