My friend Jaimee came over today while I was in the middle of making this dish. She told me to take pictures and to blog about it...so here it is.
I thawed some chicken on Sunday and I had to cook it the other day before it went bad, so I put some seasonings on it and broiled it. Afterwards, I shredded it up in my kitchen-aid and put it in a ziploc bag and in the fridge for later use. This morning I was looking for something to eat around brunch time since I had not had breakfast. I had some fresh veggies on hand from Jaimee's co-op so I decided to make this chicken and orzo fritatta. I saw it on Everyday Italian a long time ago and I have made it before, but this time I just used what I had around and put my own twist on it. You can click on that link to see the original recipe. Here are the changes that I made:
1. I omitted the creme fraiche (you can sub this with sour cream). I had niether on hand, so I just added a touch more milk.
2. I used cliantro instead of parsley.
3. I sauteed some onion with red and yellow bell pepper. (This was to sub for the roasted red pepper and the scallions...it gave it a lot more flavor, I thought, as I have made it the exact recipe before.)
4. I added a mexican blend of cheese and sprinkled some more ontop, along with some parmesean cheese.
Ok, so this ended up being more like a mexican chicken fajita fritatta. Good combo of Italian and mexican. It was really good. I filled 2 small round pans with this recipe, so we will have some more tonight when Stan gets home. Fritattas are great because they are like omlets without having to worry about it falling apart in a pan. You just bake it instead. You don't make a crust for it and it is a little heartier than a quiche. They are very versatile and can be made to eat for any meal of the day. You can add anything you want to them (ie sausage and make one for breakfast or a vegitarian version..I have seen some with asparagus. I thought that sounded pretty good.) So, there is my sales pitch for fritattas. This one was seriously the best one that I have ever made. I recommend sauteed veggies, it made a big difference. Yum!

You are brilliant! I love all of the colors. The frittata tased great too! I am sososososososo lucky to have you as a friend.
I get the same vegetables but you are so much more creative with them. This looks really good.
